Flat bread Wraps
By Paul Dooley
I regularly consume my version of a sandwich wrap once or sometimes twice a day i.e. for lunch and or dinner. My taste buds are watering as I write this: Ingredients are as follows A packet of Mission Wraps or Lebanese flat bread approximately 8 - 10 inches in diameter Hummus or Yalla brand of Hummus Fresh Garlic Powdered Turmeric Carrot Red Capsicum or tomato (fresh or Sun Dried) Chili Tuna or Chili Salmon or slices of precooked Thai Tofu Sliced Tasty Cheese Lettuce and or Rocket and or Basil Sliced Triple or Double Smoked Ham (Slices are about 4 inches in diameter) A small sealed plastic bag no shorter the 4 inches Lay one slice of flat bread on your cutting board roughly spread the hummus over the surface lightly sprinkle about a quarter teaspoon of Turmeric onto the hummus Place three or four finely sliced pieces of Fresh Garlic in a line across the hummus Then lightly shred some Carrot over the hummus area Evenly distribute a 50 gram tin of Chili Tuna (or Chili Salmon or slices of Tofu) then lay 3 or 4 chopped pieces of Red Capsicum or Tomato over the line of Garlic Add a couple slices of your favorite Tasty Cheese on top of that Now lay one piece of longish Lettuce leaf and or Rocket and or Fresh Basil leaves Over that lay your choice of sliced Ham Then Roll the edge closest to you over towards the body taking care not to overly strain the bread taking care not to break the bread and continue to roll up into a cylinder. Keep a hold of it from the center with splayed fingers and place one end into a small plastic bag (this will ensure any surplus liquids or pieces of food falling into the bag whilst your munching into it from the other end. I think its worth mentioning that Lebanese bread is sturdier than the Mission Wraps and can therefore if Fresh, cope with larger amounts of food in the body, whereas the Mission Wraps are quite thin and therefore can't quite cope when rolled with too much food in the body. One may adjust the amounts of food used. You may prefer to use a smaller amount of Tuna. Also worth mentioning; In the lunch wrap I tend to use two or three slices of ham and leave out the Tuna, whereas my dinner wrap I tend to use the Tuna with only smaller portion of the ham. One can create any number of different combination's of this recipe. I sometimes spread fresh Avocado in place of the Hummus.

Sounds yummy alright! I love that you include tips for eating it without the innards falling out, that's always the challenge! It would be really nice with alfalfa sprouts too - or an alfalfa/radish sprout combination.

Yes Donna just as I do , all or any contents are interchangeable. The flat bread is a truly advantageous vehicle for the quick yummy tucker.
Great recipe and through presentation. Can't wait for tomorrow's lunch. Frederick
